Sustainability and flavour start with who you buy from. At Hotel Doolin, our 30 Mile Menu is not a slogan, it’s how we cook. Almost everything we serve comes from within 30 miles of our door, sourced from farmers, fishermen, growers and producers we know and trust. If you’re the kind of person who reads the credits at the end of a film, this is your page.

That means seafood landed along this coastline, Burren beef raised on limestone pasture, lamb from Kilshanny, vegetables grown nearby, dairy from local farms and bread baked upstairs at Sean Nós.

Keeping our supply chain close reduces food miles, supports local livelihoods and ensures what lands on your plate is fresher, more seasonal and full of character.

Our suppliers are not a marketing line, they are part of our extended team. The people behind the produce, the craft and the ingredients that shape every menu across Fitz’s, Stonewall, Glas and Sean Nós.

Here in Hotel Doolin we pride ourselves on keeping it local.

All of our Beef is 100% Irish traceable from farm to fork! It is supplied by Noel O'Connor who takes great pride in the quality he provides. If it is not his own hand reared cattle, you can be guaranteed it came from the pastures of Co.Clare.

When at its best in spring and summer, its sourced by our butcher from the green fields of Kilshanny, just a stone's throw from our door step.

Our fish is supplied daily by Eamon and Vincent at Garrihy's seafoood, Doolin. Our smoked salmon is produced in Lisdoonvarna in the now famous Burren Smokehouse run by Birgitta Curtin and her team.

Our vegetables are supplied from Richardson's foods. The team headed by Matthew along with Sandra constantly advise us about seasonal produce ensuring we use local vegetables at their tastiest and best. We also get vegetables and herbs from Moyhill comunity garden.

Our dairy is all produced in the Republic of Ireland and supplied to us by Mick Johnston who is our local milk man, our cheese comes mostly from the region produced by small artisan producers including St.Tola of Inagh, Gubeen Farmhouse and Burren Gold produced in Balllyvaughan in the Aillwee Cave

When seasons allow, we produce a lot of our own herbs, spices, fruits & some of our vegetables in our gardens and polytunnels.

If you’re a local producer who thinks we should be working together, we’re always open to a conversation.
