Behind every great plate is a calm head, sharp knives and a team that cares. At Hotel Doolin, our kitchen is led by Head Chef Satish Parajuli, who brings over 20 years of international experience to the heart of Clare.

Originally from Nepal, home of the Himalayas, Satish trained and worked in five-star resorts around the world, building a reputation for world cuisine, bold flavour and thoughtful fusion cooking.

From fine dining kitchens to large scale hospitality, he’s cooked at the highest level, and now he’s brought that experience to Doolin.

Having fallen in love with Clare, its produce, landscape and people, Satish combines global influence with local ingredients, working closely with our 30 Mile Menu ethos to create dishes that are rooted in place but never predictable.

His philosophy is simple: respect the ingredient, balance the flavour and cook with heart. And growing up in the shadow of the world’s highest mountains, he knows that no mountain is too high when it comes to seeking perfection on the plate.
